Banana & Chocolate Gluten + Dairy Free Pancake Recipe (Quick +Easy)
I shared this recipe on Instagram last week and had so many messages about it that I thought it was good enough to share with you here too.
I don’t know about in your household, but in mine the mornings are HECTIC. After I’ve done my morning routine, I have 30 minutes to get my girls up, dressed, and in the car, all by 7.30 AM!
So whatever I can do to make the mornings easier … I do … except, I won’t give them a crappy breakfast. A bowl of Frosties or cocoa pops would be the easiest and quickest solution to my manic mornings but as a health coach, I just can’t do it.
So my mission is to have quick and fast breakfasts for them that they can eat in the car and that meet my requirements of providing at least some nutrition and their requirement which is just that it’s delicious!
During the week we rotate between a couple of different recipes like these overnight oats, chia pudding, or granola. I’m happy to have found a new simple recipe that is certainly delicious, doesn’t make me wince with the amount of sugar, and is quick enough to pull off on a school morning. (These aren’t what I would call ‘healthy’ but super fun for a Monday morning or Friday breakfast).
Banana & Chocolate Mini Pancakes Recipe
I make the batter the night before so that it’s ready in the morning.
1 To make the batter:
- 1/2 cup of oat flour (ground oats in a blender)
- 1/2 cup of plant-based milk
- 1 teaspoon of baking powder
- 1-2 teaspoons of cinnamon powder
- 1 teaspoon of vanilla
- Sprinkle of salt
Mix and leave in the fridge overnight (or let sit for at least 10 minutes after making).
2 In the morning:
- Slice the bananas into discs
- Add either a chocolate chip or a bit of peanut butter
- Sandwich them together.
3 Dip the ‘banana sandwich into the pancake batter.
4 Lightly fry in coconut oil (a few minutes on each side till they are golden).
5 Serve with berries, fruit, or a chocolate smoothie.
