Delicious, Easy, Brussel-Sprout Salad

 


Sprouts are much like marmite, people tend to either love them or hate them. Some people (my husband) get completely over excited about the prospect of a Christmas sprout and others (like my daughter) will literally throw them off their plate in disgust.
I used to hate them. And for a vegetarian, when there’s not much else to eat for Christmas lunch other than the veggies, that does come as a disappointment. I’m not sure what changed, but I am now pretty partial to a sprout. I definitely prefer them roasted to boiled. But my favourite way to eat them is raw in a salad. 
So if you are left with lots of leftover sprouts and you’re not sure you can manage another boiled one. Try them out as a salad.  I think they make a surprisingly delicious and very easy dish. 

How to make Brussel-Sprout Salad 

1. Shred brussel sprouts (I used a magimix). 

2. Add nuts and dried fruit  (I used almonds, sesame seeds, and raisins) 

3. Make the dressing. You will need: 

  • 1/4 cup Olive OIl 
  • 1/2 squeezed lemon  
  • 2 tablespoons apple cider vinegar 
  • 2 Teaspoons of dijon mustard 
  • 1 teaspoon of honey 

Grab an old jam jar, shake it all together and pour over. Mix together and serve.
