
If, like me, you’ve been on a quest to find the perfect pancake… I have great news for you, my friend, because THIS IS IT!
My criteria for ‘perfect’ are:
- Easy to make
- Somewhat nutritious
- Delicious (obvs!)
And these pancakes tick all the boxes!
The Perfect Protein Pancake Recipe
(makes 2 big ones or 3 medium ones)
Ingredients:
- 200g cottage cheese
- 2 eggs
- 1.5 cups of oats
- 1 teaspoon of baking powder
- 1 dessertspoon of maple syrup
Method:
Blend all the ingredients together – making the washing up super simple!
Heat a little coconut oil or butter in a pan.
Pour the batter in and cook on a medium heat until golden on both sides.
Serve with fruit, yogurt, and an extra drizzle of maple syrup for the most delicious breakfast!

A note on cottage cheese
You might be thinking… urgh, gross, cottage cheese doesn’t belong in a pancake! Trust me, I had the same concern. But let me quell your fears and assure you – you won’t taste the cottage cheese at all.
In fact, it adds a beautifully creamy texture and a good dose of protein (10g per 100g). With the eggs included, each pancake (I usually make two big ones) packs over 16g of protein, which is pretty awesome for something that tastes this good!
Oh, and a little tip – avoid low-fat cottage cheese. In my opinion, it tastes awful! The tastiest one I’ve found is from Longley Farm, but just go for the best option available to you.
